Easy Breakfast Comfort


I created this easy breakfast dish during a time when two things were taking place in my life: I was reading the GAPS Diet book by Dr. Campbell-McBride and I was having one of those weeks where everything I ate was “upsetting” my digestion.  One of the foundation meals in the Diet is homemade chicken broth.  I had been practicing making large batches of broth.  It occurred to me to put eggs with the broth and the idea of poaching seemed like a good one.
