I created this easy breakfast dish during a time when two things were taking place in my life: I was reading the GAPS Diet book by Dr. Campbell-McBride and I was having one of those weeks where everything I ate was “upsetting” my digestion. One of the foundation meals in the Diet is homemade chicken broth. I had been practicing making large batches of broth. It occurred to me to put eggs with the broth and the idea of poaching seemed like a good one.
Here is the recipe:
1 cup homemade chicken broth
Salt and pepper to taste.
In a small saucepan, bring the chicken broth to a slow boil.
Remove from heat. Add egg gently.
Return to heat, cover, and cook on medium until egg is cooked according to your preference.
Carefully pour into serving bowl. Add avocado chunks and salt and pepper to taste.
